Spazio Lilly Museum & Lab aims to be a reference point for pizza culture, a place where you can discover the deep roots of a dish that, over the centuries, has become a symbol of tradition, passion, and innovation. The museum’s vision is to make pizza not only an iconic dish but also a means to tell the stories, traditions, and techniques that have enabled its evolution into a global phenomenon. Through a narrative that blends culture and gastronomy, the museum strives to celebrate the historical and social importance of pizza in our world.
WHAT IT'S ABOUT - Spazio Lilly Museum & Lab Experience.
Between theory...
Spazio Lilly Museum & Lab is a museumentirely dedicated to pizza. The exhibition will take you on a journey from the very ancient origins of pizza to the present day, exploring the main ingredients, preparation techniques and tools used throughout the centuries.
...and practice!
Then in the Lab part of Spazio Lilly Museum & Lab there is a real pizzeria equipped with a kneading machine, oven and worktops. Of course, there is no shortage of all the utensils from the Lilly Codroipo range: this space is designed for holding hands-on workshops, tastings, but also as an operational space for testing equipment during the production process of new items.
Each section of the museum offers an educational experience that tells the story of pizza and how it has evolved over time to become one of the most loved and consumed foods globally. The tour also explores how pizza has adapted to different traditions and regional variations, always keeping its authenticity alive.
HISTORY OF PIZZA - A Taste

The origin of bread
The origins of pizza date back to the Fertile Crescent, where flatbreads were made from grains such as millet, barley, and spelt. These were cooked on red-hot stones and also served as a communal dish around which the family gathered.

The discovery of yeast
The Egyptians discovered yeasts, making crushed bread lighter and more digestible. Leavened bread became so valuable that it was even used as currency.

The selection of grains
The Romans perfected the selection of grains, such as spelt, and introduced new techniques for processing wheat. Their contribution was fundamental to the evolution of bread toward more refined and lighter forms.

Declination and survival
With the fall of the Roman Empire, bread-making was lost in many parts of Europe, while in southern Italy, schiacciata remained a poor and popular food. Pizza was mentioned sporadically in the Commedia dell’Arte as the food of the hungry.

A tradition that endures
Pizza continued to be consumed in southern Italy, but it still did not achieve great fame. It remained a popular food mainly among the working classes.

Pizza Margherita is born
With the introduction of tomato and mozzarella cheese, pizza took its current form. In 1889, Neapolitan pizza maker Raffaele Esposito created Pizza Margherita in honor of Queen Margherita of Savoy, consecrating it as a symbol of Italian cuisine.

The global spread
After World War II, pizza spread throughout Italy and the world thanks to migration flows. In 2010, it was recognized as a Traditional Specialty Guaranteed (TSG) by theEuropean Union, and in 2017, the art of the Neapolitan pizza maker was declared an Intangible Cultural Heritage of Humanity byUNESCO.
